What happens in court?

My cousin after she recently turned 18 stole something from target and it was about 18 dollars. She has a court day scheduled. She wasnt arrested at the scene just given a citation to pay. Whats going to happen at court if she pleas either (guilty, non guilty, no contest) ? She has never had any issues with the law, not even truancy court.
